Bacon Fajita Quiche- Cinco De Mayo

To celebrate Cinco De Mayo we have prepared the perfect pastry dish to mark the occasion. Simple and delicious, join the festivities with a tried and tested fajita recipe made unique with a crunchy 22nd Pidy Quiche Base.
Ingredients
- 4 Pidy Quiches
- 1 Peppers
- 1 Red Onion
- 2 Rashers
- 3 Eggs
- 250ml Cream
- 2 Tbsp Grated Parmesan
- Fajita Seasoning
- Salt & Pepper
Fajita Seasoning
- Cumin
- Chilli powder
- Paprika
- Garlic powder
- Onion powder
- Cayenne pepper
Method
- Dice bacon, cook, and set aside
- Chop peppers and onion. Fry with fajita seasoning until soft and then set aside.
- Beat eggs and add cream, parmesan, bacon, peppers, onion, and salt and pepper to taste.
- Line the 22cm Pidy Quiche Base with cheese and pour in egg mixture.
- Cook at 170 C for 20 minutes. Reduce heat and cook at 150C for a further 15 minutes.
- Serve with sour cream and fresh salad
