Ingredients

For the Tartlets:

  • 12 Pidy Mini Sweet Tartlets Sablee (4.5cm)
  • 200ml fresh Irish cream
  • 2 tbsp icing sugar
  • 1 tsp vanilla extract
  • For the Berry Compote:

  • 200g mixed seasonal berries (e.g., strawberries, raspberries, blackberries, and blueberries)
  • 2 tbsp sugar
  • 1 tbsp lemon juice
  • Garnish:

  • Fresh mint leaves
  • Extra berries for topping
  • A dusting of icing sugar
  •  

    Instructions:

          1. Prepare the Berry Compote:
            • In a small saucepan, combine the mixed berries, sugar, and lemon juice.
            • Cook over medium heat, stirring occasionally, until the berries have broken down and the mixture has thickened- about 10 minutes should do the trick.
            • Remove from heat and let cool completely.
          2. Whip the Cream:
            • In a large mixing bowl, combine the fresh cream, icing sugar, and vanilla extract.
            • Whip until stiff peaks form.
          3. Assemble the Tartlets:
            • Take the 12 Pidy Mini Sweet Tartelettes out of the packaging and place on a serving tray.
            • Spoon a small amount of the berry compote into each tartlet shell.
            • Pipe or spoon the whipped cream on top of the berry compote.
          4. Garnish:
            • Top each tartlet with fresh berries.
            • Garnish with a small mint leaf.
            • Lightly dust with icing sugar for an elegant finish.
