Biscuit Day Berry Tartlet Recipe

Biscuit Day Berry Tartlet Recipe

National Biscuit Day may not be the most widely celebrated holiday, and it's certainly not on the same scale as Christmas or Easter. Regardless, it deserves recognition for what it is: a small bit of fun.

Much like the holiday itself, biscuits bring a touch of joy to our everyday lives, often going unnoticed as the unsung heroes of our daily pleasures.

Biscuits, with their delightful crunch and comforting flavours, have a way of brightening up even the most mundane moments. Whether enjoyed with a cup of tea, as a quick snack, or a delicious dessert, they add a sprinkle of happiness to our day-to-day.

This National Biscuit Day let's celebrate these modest treats with a special recipe that showcases their versatility and charm.

Our Seasonal Berry Tartlets, made with Pidy Mini Sweet Tartelets Sablee, are the perfect way to mark this novel occasion.

Using fresh, seasonal Irish berries, these tartlets are easy to make and can be customized to suit any taste.

Join us in celebrating the simple joy that biscuits bring with this delightful, fun, and delicious recipe.

For the Tartlets:

  • 12 Pidy Mini Sweet Tartlets Sablee (4.5cm)
  • 200ml fresh Irish cream
  • 2 tbsp icing sugar
  • 1 tsp vanilla extract
  • For the Berry Compote:

  • 200g mixed seasonal berries (e.g., strawberries, raspberries, blackberries, and blueberries)
  • 2 tbsp sugar
  • 1 tbsp lemon juice
  • Garnish:

  • Fresh mint leaves
  • Extra berries for topping
  • A dusting of icing sugar

          1. Prepare the Berry Compote:
            • In a small saucepan, combine the mixed berries, sugar, and lemon juice.
            • Cook over medium heat, stirring occasionally, until the berries have broken down and the mixture has thickened- about 10 minutes should do the trick.
            • Remove from heat and let cool completely.
          2. Whip the Cream:
            • In a large mixing bowl, combine the fresh cream, icing sugar, and vanilla extract.
            • Whip until stiff peaks form.
          3. Assemble the Tartlets:
            • Take the 12 Pidy Mini Sweet Tartelettes out of the packaging and place on a serving tray.
            • Spoon a small amount of the berry compote into each tartlet shell.
            • Pipe or spoon the whipped cream on top of the berry compote.
          4. Garnish:
            • Top each tartlet with fresh berries.
            • Garnish with a small mint leaf.
            • Lightly dust with icing sugar for an elegant finish.

    Personalisation Tips:

          • Get with the Weather: Use seasonal berries to keep tartlets fresh and locally inspired
          • An maith leat seacláid?: Drizzle or simply cover your tartlette in chocolate for added richness
          • Go Nuts!: Sprinkle toasted almonds or hazelnuts for texture and flavour
          • Cream Infusion: Get creative with your cream by adding citrus zest, an infusion of fresh aromatic herbs (or even a splash of Irish whiskey!)
